This past week some of our very dear friends celebrated the Chinese New Year. I have a very dear friend who came to my high school in the tenth grade and we immediately became the best of friends. Her mom enlightened me so much about Chinese cooking. Fiona is such a special person, and although we live very different lives and live over 4 hours away from one another, we will always be close.  She will always have a special place in my heart.

My husband's friend and associate Donald is from China and he also has quickly become so special to us as well. He is the talented developer for my Delicious and Kosher website along with his full time software development work that he does in conjunction with my husband for Fortune 100 companies. Donald does everything with such a caring and conscientious attitude.  Not only is he a great developer, but also he is a wonderful friend to my husband, and now me.

In honor of the Chinese New Year, coupled with my obsession for Chinese/Asian food, I am featuring this week a recipe that I had previously released on my website as part of another recipe.

It is imperative in good Asian cooking that you know the basics that make everything else so exceptional. I am teaching you how to make a classic Chinese chicken stock. You will use this stock in so many Asian dishes, from soup to sauce. It is bursting with ginger and other aromatics that make this a step above ordinary chicken stock, making all that you add this to extraordinary.

Karen is a stay- at- home mother of five and an entrepreneur who has had a passion for cooking since childhood.? Karen and her family decided to live an observant modern orthodox Jewish lifestyle 15 years ago. She now transforms her favorite American and international non-kosher dishes into delicious kosher fare.

After college she served in the Israel Defense Forces, married, and now devotes her life to her family, friends, faith, and love of cooking while running a thriving health and wellness business from home. Karen has taught kosher cooking classes for the past 10 years in Boca Raton with her friends, Lauren Bakst, a gourmet cook, and Lowil Stoller, a pastry chef.

Karen's recipes were featured at a dinner honoring the best chefs of the capital district hosted by the Marriott Hotel in Albany, New York. She has catered affairs up to 350 people including the Maimonides Medical Society annual dinner for over 100 Physicians at the Albany Medical Center Hospital.

She is presently working on her upcoming book, Delicious and Kosher, and is founder of the Delicious and Kosher website.

Chinese Chicken Stock*

I will share with you many of my cooking secrets. This is one of my ancient Chinese secrets... shhhh... here it is....
Nothing transforms an Asian-inspired meal like homemade chicken stock. Don't let the word, 'homemade' intimidate you, as this is very simple to make. It infuses everything you add this to with a rich aromatic flavor that you cannot duplicate with commercially made stocks.  It freezes well, so you can make a double batch and freeze it in quart-sized containers.  It's great having this on hand for a last minute Asian meal.

1 kosher chicken cut into quarters plus 4 whole chicken breasts, preferably organic

6 quarts cold water

14 scallions, cleaned, trimmed and cut in half lengthwise

12, 3-4 inch slices ginger, peeled

1 large red onion cut into six pieces

5 carrots, peeled and cut in half

6 celery stalks, trimmed and cut in half

12 garlic cloves, peeled

Place all of the ingredients in a very large stockpot, or divide evenly between two large pots. Bring to a boil and skim the stock when it gets frothy on the top. Reduce heat and simmer over a low heat for at least 2 hours.

Strain the stock when no longer hot, removing all of the veggies and the chicken. Refrigerate overnight.

The next day, skim all of the excess fat from the top of the pot with a large fine mesh spoon or a large slotted spoon. Pour the extra stock that you will not need into 1 quart-size plastic containers. Freeze until needed, making sure to label with the name of the recipe, marking and dating it as meat.
