Issue number:6

This week I was contacted by a long lost dear friend who was our Israeli exchange student in high school. We kept in touch for years, and when I moved to Israel and served in the Israeli army, Hadar and her family were always there for me. I spent countless weekends with this special family who had such a positive outlook on life, and were so warm, welcoming and loving.  I last saw Hadar when my first two children were little and she was just married. Well, we lost touch with each other and I have been looking for her over the years. She finally contacted me through her daughter's facebook account last week. After 15 years we have finally reconnected!

I recently invited my aunt and cousin whom I had lost touch with over a year ago.  Although we lead different lifestyles, I still love and cherish them.  We experienced such a wonderful day connecting that we found it difficult saying good-bye.I have not been the best at keeping in touch with friends and family who are long distance -that needs to stop!

When you have such a special connection and love for someone it is a waste if you don't treasure it.  Yes, we lead very different lives; I keep kosher and observe the Sabbath, and she does not. That is where it ends though. We are both moms who love our children, husbands, parents, siblings and friends with all our heart and soul. Don't let religious differences or geography ever get in the way of what matters most in life. Appreciate the people you love both near and far.

Next week I am unbelievably excited as I am off to Kosherfest in New York City! I will be reporting to you about all of the exciting updates and new products within the next two weeks.

Make it a great week!

Warm regards,

Healthy After School Snack Ideas for Busy Families

"Mom, I'm starving!! What's for dinner, can I have ice cream? Where are the chips? Can we eat now?!"  Sound familiar? Being prepared can save you a lot of stress while nourishing your kids properly that will help them become healthier and improve their mood, making for a happier family. Have no fear; it is easier than you think!

Kids need snacks, but not constant grazing. You need to make sure the snacks are healthy and are beneficial to them nutritionally. If you give them the junk that they clamor for from watching too much TV, they will end up eating continually. It makes sense, if you think about it.

When your children (or you for that matter) don't get the nutrition necessary, their bodies still crave those nutrients and will keep signaling that it's time to eat--even after downing a bag of chips and drinking a lot of juice or soda (which I never keep in my house as it is all chemicals and zero nutrients!) They might be temporarily full - but never satisfied - because the body was overfed and undernourished so therefore still needed food (when I say that I mean REAL food.) See why good nutrition is so important? This is how you stop the vicious cycle of constantly eating; junk doesn't satisfy at all. Shh... it's a great secret that works just as well for adults too!

So let's get a grip on this snack food issue and get some snack ideas happening! Not having a plan (as we well know!) is a recipe for disaster. You know how to make a grocery list--how about adding some of these snack ideas on your list this week?

Here are six easy ones:

1) Fruit: Try making the fruit bowl the first "go to" place for a snack and you'll get some extra nutrients in your child at the same time.
2) Cheese: I love those cheese sticks, but you can just as easily cut up cubes of (lower fat choices are better) cheese for your child (an ounce is plenty). Pair the cheese and the fruit and you have a terrific snack idea that will satiate and satisfy.
3) Nut Butters: I am crazy for nut butters; I have peanut and almond butter in my fridge.  Serving the kids "ants" on a log (celery stalk spread with nut butter and sprinkled with organic raisins) or organic apple slices spread with almond or peanut butter provide a great mix of carbohydrates, fat and protein--that will satisfy and stop the grazing!
4) Yogurt: Purchase plain, low fat Greek yogurt, mix it with frozen berries (we like blueberries which defrost quickly), some diced banana and a squirt of local honey (helps with immunity for allergies!) sprinkled with almond slices if desired for added crunch and essential fatty acids, plus protein.
5) Smoothie: Whip up some whey protein powder (I use Isagenix brand organic whey protein shake), fruit, a little water and you've got a powerful snack in a glass. This is especially good for your teenagers between school and sports.
6) Veggies: Cucumbers, peppers, carrot sticks and baby tomatoes with a delicious low-fat natural ranch dip or yogurt-based homemade dip or hummus.

So there you have it--six awesome snack ideas that are healthy, inexpensive and will keep your children from starving before dinner!  See Karen's veggie dip recipe in the recipe section of the E Newsletter below....

Q:   "How do I use bananas that are going ripe other than for banana cake/bread?"

A: Peel them and store in a freezer safe ziplock bag in your freezer. We go through a lot of bananas that are always ready in our freezer for our protein shakes and smoothies.

Q:   "Is microwave popcorn safe to eat? "

A: No! Microwaveable popcorn bags have very harmful chemicals that when heated leach out into the popcorn, adding to the mix the very harmful trans fats that turn an otherwise healthy snack into a dangerous one.

It is so easy to make your own popcorn in a pot or in a popcorn popper, or even to buy a bag of ready-made. It is not necessary to poison your family when there are easy and quick alternatives.

Karen is a stay- at- home mother of five and an entrepreneur who has had a passion for cooking since childhood. For Karen cooking is like a sixth sense, much like those with an ear for music can pick up and play an instrument without knowing the notes. The inspiration of her mother's and grandparents' creative and talented cooking helped form the foundation for her passion for cooking.

From the first falafel she tasted from an Israeli cook, to the lessons from gourmet Italian home cooks and restaurant chefs, to days spent learning from her friend's mom about Hong Kong cuisine, to trips to Chinatown and living in Israel, to mastering the art of Persian cooking after marrying her Iranian husband, to lessons from gourmet Moroccan friends in Boca Raton, Karen lives and learns from every culture and is excited to share that wisdom with you.

Karen and her family decided to live an observant modern orthodox Jewish lifestyle 15 years ago. She now transforms her favorite American and international non-kosher dishes into delicious kosher fare.

After college she served in the Israel Defense Forces, married, and now devotes her life to her family, friends, faith, and love of cooking while running a thriving health and wellness business from home. Karen has taught kosher cooking classes for the past 10 years in Boca Raton with her friends, Lauren Bakst, a gourmet cook, and Lowil Stoller, a pastry chef.

Karen's recipes were featured at a dinner honoring the best chefs of the capital district hosted by the Marriot Hotel in Albany, New York. She has catered affairs up to 350 people, including the Maimonides Medical Society annual dinner for over 100 Physicians at the Albany Medical Center Hospital.

She is presently working on her upcoming book, "Delicious and Kosher", and is founder of the Delicious and Kosher website.
