Schedule a Life
 
As I go into another week I am reminded that when I stray from my schedule and from being organized in every area of my life everything around me, including my mood, starts to crumble.  Scheduling your day is crucial for success in life. When I do not follow a schedule I truly am lost and my mood is affected in a negative way.

One thing my father and grandmother both taught me was that if you are very efficient and follow a schedule, always keeping an eye on the clock, you will make so much more progress in life.

My mom is the creative artist in the family and she was always so easy going and made the time to savor life.  There was always time to hang out, time for fun and time to nurture our creativity.

I Believe that Balance is the Key to a Happy and Fulfilled Life

I try to take the best of what my parents and grandparents taught me to become the best that I can be.  Following a schedule is so important, but when you follow it without occasionally deviating from your schedule, you'll be missing out on precious moments that do not come around often, and sometimes never again.

So, when you are scheduling your appointments, meetings, carpool pick ups, homework with the kids, menu of the week, etc., don't forget to schedule in a weekly date night with your spouse or special time with your children; time for yourself to unwind and have fun; lunch with friends; and of course time to workout and take better care of your health. Time is fleeting and precious, so treat it as if it is, and your life will be better and more meaningful.


Grapeseed Oil, a Better Choice

When pressed, tiny grape seeds yield green-colored oil with remarkable properties. Grapeseed oil has a light flavor and contains a high level of polyunsaturated fat. It can also be heated up to 485¡ãF, making it the ideal healthy cooking partner.

Usage
 
The kitchen is where grapeseed oil comes into its prime. With a smoke point of 485¡ãF, the oil is easy to use in cooking and will make burnt oil a thing of the past. The nutty flavor works well in vinaigrettes with any type of vinegar, never overwhelming the other ingredients.

Health benefits

As one of the richest natural sources of linoleic acid, grapeseed oil can do wonders when it comes to fighting heart disease and bad cholesterol. Linoleic acid is a member of the polyunsaturated fatty acid family. These fatty acids tend to blend with cholesterol in the blood and transform it into something the body knows how to get rid of. Grapeseed oil has the highest concentration of poly (76%) unsaturated fatty acids of any oil and is a good source of Vitamin E Alpha, an important anti-oxidant,4.3 mg per serving.

    Why Buy Oil Expeller Pressed Oil?

    Expeller, or cold pressed oil, is NOT solvent extracted like the vast majority of grapeseed oils, which are extracted with the use of chemicals. Expeller pressed grapeseed oil is the result of a chemical-free mechanical process that extracts oil from seeds with no external heat, producing the finest oil. This method of oil extraction is an alternative to the chemical extraction method used for many conventional oils. Sometimes expeller pressed is referred to as cold-pressed.


    Q:   "How do I use bananas that are going ripe other than for banana cake/bread?"

    A: Peel them and store them in a freezer safe ziplock bag in your freezer. We go through a lot of bananas that are always ready in our freezer for our protein shakes and smoothies.

    Karen is a stay- at- home mother of five and an entrepreneur who has had a passion for cooking since childhood. For Karen cooking is like a sixth sense, much like those with an ear for music can pick up and play an instrument without knowing the notes. The inspiration of her mother's and grandparents' creative and talented cooking helped form the foundation for her passion for cooking.

    From the first falafel she tasted from an Israeli cook, to the lessons from gourmet Italian home cooks and restaurant chefs, to days spent learning from her friend's mom about Hong Kong cuisine, to trips to Chinatown and living in Israel, to mastering the art of Persian cooking after marrying her Iranian husband, to lessons from gourmet Moroccan friends in Boca Raton, Karen lives and learns from every culture and is excited to share that wisdom with you.

    Karen and her family decided to live an observant modern orthodox Jewish lifestyle 15 years ago. She now transforms her favorite American and international non-kosher dishes into delicious kosher fare.

    After college she served in the Israel Defense Forces, married, and now devotes her life to her family, friends, faith, and love of cooking while running a thriving health and wellness business from home. Karen has taught kosher cooking classes for the past 10 years in Boca Raton with her friends, Lauren Bakst, a gourmet cook, and Lowil Stoller, a pastry chef.

    Karen's recipes were featured at a dinner honoring the best chefs of the capital district hosted by the Marriot Hotel in Albany, New York. She has catered affairs up to 350 people, including the Maimonides Medical Society annual dinner for over 100 Physicians at the Albany Medical Center Hospital.

    This week I recommend that you try to buy mostly cold or expeller pressed oil for your cooking and salad dressings. Avoiding the chemicals that are used in processing most non-cold or expeller pressed oils, you are taking another step in protecting your family's health.

    Try Latourangelle brand grapeseed oil from Italy. It is certified kosher by the Star K, and you can find it in your local supermarket, gourmet market or health food store.

    Hawaiian Chicken Burgers*

    The first time I went to Hawaii I felt as if I had landed on another planet. Coming from upstate New York in the winter everything was so lush and tropical. The ocean was a beautiful shade of turquoise, surrounded by breathtaking mountains. The calm, happy, relaxed attitude from the locals was so contagious that we couldn't help but feel that way too. The other thing I noticed was that all of the produce was so vibrant and fresh. Freshly squeezed tropical juices were bursting with flavor. It was in Maui where I took spa-style cooking classes and was introduced to bright green micro greens and baby lettuce before it had reached the mainland. I was also made aware of how much Hawaii is influenced by Asia. I dined on many fusion styles, Asian -inspired dishes during my visit. This recipe is a sandwich that I created with Hawaii in mind. It is healthier to make it with ground chicken breast or salmon; however, you can occasionally make it with beef.

    For the ground chicken mixture:
     
    2 pounds ground chicken breast or ground chicken breast and thigh mixed (salmon or beef)
    2 tablespoons ginger, grated
    3 cloves garlic, crushed
    8 scallions, chopped
    ? cup cilantro, chopped
    zest of 1 lemon, grated
    ? teaspoon red chili flakes
    3 fresh shitake mushrooms, chopped
    2 teaspoons toasted sesame oil
    2 tablespoons maple syrup
    4 tablespoons soy sauce
    2 tablespoons grapeseed or canola oil
    1/3 cup Vegenaise brand or light mayonnaise
    sea salt and freshly ground black pepper to taste

    For assembling the burger:

    1 fresh pineapple, peeled, cored and sliced into about 1-2 inches thick circles (preferably the "Gold" variety")
    1 red onion, thinly sliced
    micro pea shoots or lettuce of your choice
    whole grain buns, baguettes or ciabatta bread, toasted
    1 recipe, Karen's Sweet Chili Mayo or sweet chili sauce mixed with English mustard
    16 medium size or 8 large fresh shitake mushrooms, stems removed and soaked for about 15 minutes in the following simple marinade

    Marinade:
     
    2 tablespoons low-sodium soy sauce
    1 tablespoon peanut oil
    1 tablespoon toasted sesame oil
    1 tablespoon rice wine
    1 tablespoon fresh ginger, chopped
    1 teaspoon raw or regular sugar

    Sweet Chili Mayo for spreading on the burgers before serving

    Combine all burger ingredients in a large bowl; form into patties and chill on a platter until ready to grill or pan fry. Cook in a lightly oiled non-stick pan or grill pan over a medium-low heat, turning once, about 4 -5 minutes on each side. You can cook in a regular frying pan or a grill pan as well.

    After briefly marinating the fresh shitake mushrooms, grill or pan fry until they are nicely caramelized.

    Make Karen's Sweet Chili Mayo or garnish with sweet chili sauce, adding a small dollop of Coleman's English mustard, then mix.

    Assemble the burgers, lining the buns with layers of the grilled pineapple, shitake mushrooms, red onion slices, greens and the burger onto freshly toasted bread that has been spread with the sauce and serve.

    I find that the burgers are much more moist and easier to cook on a grill pan or a non-stick pan.

    For health reasons, I recommend only using a non-PFOA pan. Scan Pan is a non-PHOA brand and there are a few more. PFOA is a known toxin and could be harmful to your health.


    *Serves:  6-8

    *Meat or Parve, if made with salmon
