I love the beginning of the New Year! It is a new beginning, a chance to make a fresh start in so many areas of your life by making choices that can truly affect your health, happiness and income. I always strive to be a better person, but the New Year signals that changes need to me made in a much more powerful way. Perhaps it is the "alarm clock" ringing in the New Year that is also a wake up call.

Make those changes turn procrastination into action, action that leads to a better life. If you are a parent, I can guarantee you that your children will soon begin to model your actions and create a better life for themselves as well.

With the start of a New Year upon us I will have two great new sections featured on the website launching very soon. The first is some of my most sought after TOP SECRET recipes that you can purchase and download immediately! In addition to all of the terrific free recipes that I have and will continue to create, there will be a few specialized recipes available to you in our recipe store.

The second section that we will be offering is an exclusive premium Menu-of-the-Week subscription. This will provide you with wonderful family-friendly meals that are kosher, tasty, healthy and packed with nutrients. There will be many recipes that are exclusive to the clients of the Platinum Members' subscription. Shopping lists will be included as well as complete weeknight menus and recipes! Imagine getting fit and healthy while fueling your family with delicious and easy weeknight meals.

The Missing Link to Vibrant Health and Weight Loss

The World Health Organization states that 700 million adults will be obese in 2015, up nearly double from 400 million in 2005. Obesity and toxicity are major risk factors for chronic diseases, accounting for an estimated 2.5 million deaths per year.

Why is obesity such an epidemic when there are so many diets available?
Quite simply, most diet products don't work because they fail to address the important principles of nutritional cleansing - the missing link to weight loss.

A Declining State of Health
 
In 1997 UCLA conducted a study on the effects of iron. They had a sample of spinach grown back in 1953. Several women were reported as being anemic even though they were supposedly eating a lot of spinach salads. So they compared samples of spinach from 1997 with those grown in 1953. It was concluded that you would have to eat 43 bowls of spinach in 1997 to equal just 1 bowl in 1953! Not only was the spinach deficient in iron, but other minerals as well. As a consequence, when you do not have minerals sufficient, the body cannot use the vitamins.

The UCLA study showed:

"Spinach's potassium content dropped by 53 percent, its phosphorus by 70 percent, its iron by 60 percent and its copper by 96 percent."

Research confirms

According to National Geographic and the Environmental Protection Agency, there are more than 3,000 chemicals added to our food supply, including pesticides, insecticides, antibiotics, steroids and hormones.  Pesticide residues are detectable in 50-95% of the food consumed in the U.S.  Pesticides can damage the endocrine and glandular system. The U.S. uses 30 times more synthetic pesticides today than in 1945.
 
Mounds of data demonstrate that our environment - the air we breathe, the water we drink, our soil, the inside of our homes and offices, and even the foods we eat are filled with thousands of different chemicals.  Hundreds of new ones are introduced every year and may take years before they are tested or regulated.
 
The Solution

We need to make better food choices, clean up our household environment and cleanse our bodies regularly of harmful toxins.

Q:   "Is non stick cookware unhealthy?"

A: PFOA is the villain in whole non-stick pan scare. Here is an explanation of how it has wreaked havoc and continues to do so. Fight back and arm yourself with the knowledge of how you can protect your family.

The fluorine-based nonstick chemical PFOA, or perfluorooctanoic acid, was developed by the company DuPont more than 50 years ago and is what makes Teflon and other nonstick pans so slippery. But scientists have since become concerned that PFOA contributes to long-term health problems. A study published today in the "Archives of Pediatric and Adolescent Medicine" found that children and teenagers with PFOA in their blood serum had higher total cholesterol levels and higher levels of LDL, the "bad" cholesterol, than children who were not exposed. (The study wasn't designed to show causation, so it doesn't mean that PFOA is necessarily the culprit.)

In 2006, the Environmental Protection Agency launched a program aimed at reducing the use of PFOA by 95 percent in 2010 and eliminating it altogether by 2015. Still, the chemical persists in people's bodies and in the environment for years, binding to proteins in the liver and blood. Given that, and the uncertainty about the long-term health effects of PFOA exposure, it makes sense to consider how to reduce unnecessary contact with the chemical at home. Here are three suggestions:
 
  • Use stainless steel or cast-iron pans instead of nonstick. They will be almost as easy to clean up, especially if you warm them up first and apply a drizzle of oil.
  • Use PFOA non-stick cookware such as Scanpan.
  • Don't buy furniture or carpets with stain-repellent finishes, and turn down offers to have stain-repellent coatings applied to home furnishings when you buy them.
  • Cook popcorn on the stove the old-fashioned way, rather than in microwavable bags. Some fast-food carryout bags are also coated with PFOAs to prevent grease from soaking through. Make sure that your food containers and bags are all PFOA and BPA free.

    Harvest Salad*

    This salad is adapted from a salad that my sister-in-law Elana shared with me. Her friend Emily made a similar salad that Elana could not get enough of!  Her salad used pears , but I  prefer apples so I substituted  apples in place of the pears. Either way, it is such a yummy salad that feels so nourishing with lots of great texture and nutrients, not to mention flavor!
    Try to use organic produce when available and fresh. Thanks so much to Emily for being the inspiration behind this creation!

    1, 10-ounce bag/container fresh baby spinach
    1 romaine heart, sliced
    20 grape or cherry tomatoes, halved
    1 large Granny Smith apple, or pear of your choice, medium dice
    3-4 Israeli or baby cucumbers, sliced into rounds
    1 handful red onion, sliced into strips
    ? cup or more, almond slivers or slices, lightly salted, then toasted
     Optional: 1/2 - 1 cup, diced feta cheese (for parve version, leave out feta cheese.)
    1 large sweet potato, peeled and cut into julienne strips, then tossed with extra virgin olive oil, salt and pepper. Roast julienned sweet potato in a half sheet pan, lined with parchment paper at 400 degrees until crisp and tender, but not burnt. Set aside and keep at room temperature until ready to assemble and serve. Best not refrigerated.

    For the dressing:
    ? cup extra virgin olive oil
    2 tablespoons fresh lime juice
    1 tablespoon balsamic vinegar
    2 cloves garlic, crushed
    ? teaspoon sea salt
    2 teaspoons raw sugar or 1 tablespoon maple syrup

    Dress the salad sparingly right before tossing and serving, being careful not to put too much dressing as I did when testing this for the first time!
     
    Serves 6-8

    * Dairy with feta cheese; Parve (non-dairy) with no cheese.
