As most of you know, my home-based business is with Isagenix International. Isagenix is a health and wellness company that markets its products using a powerful distribution system,  network marketing.

You may want to make a double batch and hand some out in your Mishloach Manot (gift basket)  for Purim! It lasts several weeks when stored in airtight containers. Make sure that your containers are either glass or BPA FREE plastic for a non-toxic, decadent treat.

This is a gluten and dairy free recipe for all of your gluten and dairy free friends and family.

Karen is a stay- at- home mother of five and an entrepreneur who has had a passion for cooking since childhood.? For Karen cooking is like a sixth sense, much like those with an ear for music can pick up and play an instrument without knowing the notes? The inspiration of her mother's and grandparents' creative and talented cooking helped form the foundation for her passion for cooking.

From the first falafel she tasted from an Israeli cook, to the lessons from gourmet Italian home cooks and restaurant chefs, to days spent learning from her friend's mom about Hong Kong cuisine, to trips to Chinatown and living in Israel, to mastering the art of Persian cooking after marrying her Iranian husband, to lessons from gourmet Moroccan friends in Boca Raton, Karen lives and learns from every culture and is excited to share that wisdom with you.

Karen and her family decided to live an observant modern orthodox Jewish lifestyle 15 years ago. She now transforms her favorite American and international non-kosher dishes into delicious kosher fare.

After college she served in the Israel Defense Forces, married, and now devotes her life to her family, friends, faith, and love of cooking while running a thriving health and wellness business from home. Karen has taught kosher cooking classes for the past 10 years in Boca Raton with her friends, Lauren Bakst, a gourmet cook, and Lowil Stoller, a pastry chef.

Karen's recipes were featured at a dinner honoring the best chefs of the capital district hosted by the Marriott Hotel in Albany, New York. She has catered affairs up to 350 people including the Maimonides Medical Society annual dinner for over 100 Physicians at the Albany Medical Center Hospital.

She is presently working on her upcoming book, Delicious and Kosher, and is founder of the Delicious and Kosher website.





Homemade Fruit & Nut Burst Granola

Imagine yourself at a beautiful country Inn in the mountains of Vermont. This is the feeling that is evoked in me when I eat this homemade granola. It is very nurturing and comforting with vibrant, tangy fruit and a bright undertone of orange. The maple reminds me of home and it has had an ongoing love affair with me ever since I can remember! The nuts give it crunch and the oats feel so healthy! Sprinkle over yogurt or fresh fruit, or eat it straight as a trail mix. Okay, you can eat it with milk too!                

 
 

 
4 cups organic rolled oats (not the quick-cooking kind)
1 cup pure maple syrup
1/2 cup canola oil                      
zest of 2 oranges
1-1/2 teaspoons pure vanilla extract
1-1/2 teaspoons sea salt
1 cup sweetened coconut, grated
2 cups almonds, sliced
½ cup pecan pieces, chopped
1 cup walnuts, chopped
1 cup dried apricots, small dice
1 cup dried organic cherries, halved
3/4 cup dried organic cranberries, preferably fruit juice-sweetened variety
Preheat oven to 350 degrees (convection at a slightly lower temperature yields even better results.)
In a large bowl, mix all ingredients together, except for the fruit. Place on 2 half sheet pans lined with parchment paper or a silpat.   Be careful not to put too much granola mixture in the pan.
Bake in oven stirring every 15 minutes until golden and a bit crisp. Remove from oven and immediately toss with the dried fruit. Let cool completely. Store in an airtight container for several weeks and enjoy!
