This week we are going to expand our quick and easy sauce knowledge base to include a different variation of pesto. This pesto is non-dairy, has an incredible olive and nut taste, and brightens up anything you serve it with. Don't be frightened. Although it is elegant and gourmet, it is very easy!

I will be introducing you to a variety of different variations of pesto and salsas, as I am a bit obsessed with them and their creative twists that create a completely different spin on your favorite dishes. We need to break up the boredom at your daily dinner table and also when you entertain. Don't you want to be a rock star in the kitchen?!

Karen is a stay- at- home mother of five and an entrepreneur who has had a passion for cooking since childhood.? For Karen cooking is like a sixth sense, much like those with an ear for music can pick up and play an instrument without knowing the notes? The inspiration of her mother's and grandparents' creative and talented cooking helped form the foundation for her passion for cooking.

From the first falafel she tasted from an Israeli cook, to the lessons from gourmet Italian home cooks and restaurant chefs, to days spent learning from her friend's mom about Hong Kong cuisine, to trips to Chinatown and living in Israel, to mastering the art of Persian cooking after marrying her Iranian husband, to lessons from gourmet Moroccan friends in Boca Raton, Karen lives and learns from every culture and is excited to share that wisdom with you.

Karen and her family decided to live an observant modern orthodox Jewish lifestyle 15 years ago. She now transforms her favorite American and international non-kosher dishes into delicious kosher fare.

After college she served in the Israel Defense Forces, married, and now devotes her life to her family, friends, faith, and love of cooking while running a thriving health and wellness business from home. Karen has taught kosher cooking classes for the past 10 years in Boca Raton with her friends, Lauren Bakst, a gourmet cook, and Lowil Stoller, a pastry chef.

Karen's recipes were featured at a dinner honoring the best chefs of the capital district hosted by the Marriott Hotel in Albany, New York. She has catered affairs up to 350 people including the Maimonides Medical Society annual dinner for over 100 Physicians at the Albany Medical Center Hospital.

She is presently working on her upcoming book, Delicious and Kosher, and is founder of the Delicious and Kosher website.




As I write this, I am on the 9th day of a Cleansing and Fat Burning program from Isagenix. Olive and Nut Pesto*

Pesto is one of those magical foods that can turn a ho-hum sandwich into a flavor-packed gourmet meal. Some people think that there is only one use for pesto.... pasta, and only one kind of pesto. I know at least a dozen! A plain grilled chicken cutlet or fish can be transformed with just one tablespoon of pesto!  Countless vegetarian dishes with tofu or beans are brought to life as well with the incredible flavor boost that pesto provides. This keeps for a week in the fridge, or frozen for a few months. Freeze in an ice cube tray, then pop out the pesto cubes into an airtight freezer safe container. This will give you individual servings of pesto that defrost quickly as you need it.

11/2 cup green Israeli or Spanish green olives, pitted, coarsely chopped

3/4 cup Kalamata Greek olive, pitted, coarsely chopped

½ cup walnuts, lightly toasted and coarsely chopped

1/4 cup pine nuts, lightly toasted and coarsely chopped

1 cup fresh basil leaves

2 tablespoons fresh parsley

3-4 cloves garlic, chopped

2 tablespoons fresh chives, sliced

freshly ground black pepper, to taste

1 teaspoon lemon zest, freshly grated

½ cup extra-virgin olive oil; add more as needed

sea salt to taste - optional (olives are very salty; add salt, as needed, with caution)

Mortar and pestle method:

Completely smash the garlic until it is a paste-like consistency prior to adding the other ingredients. Drizzle the oil in gradually after all of the other ingredients have been ground in the mortar.

Food processor method:

This works best in a smaller food processor.

Add all the ingredients to the food processor, except for the oil and salt. Using a pulsing action, coarsely chop the mixture. When the ingredients have been completely blended, slowly drizzle the oil over the ingredients while the machine is still running, pulsing the machine, while being careful not to turn the mixture into a smooth paste. It should resemble a coarse paste with lots of texture.  Scoop out the mixture adding salt to taste mixing well with a fork.

** You can purchase pitted olives, use an olive pitter, or remove the pits by hitting the olives lightly with a chef's knife or rolling pin on a clean, dry counter top.  I love my Good Grips brand olive pitter.
