I hope that everyone is having a meaningful Chanukah, full of light. As it draws to an end, (and unfortunately so does no homework week !), keep that light in your home burning all year long with kind words to people you love, treating them like the true gifts that they are. Also, limit negative influences in your life including excessively watching the news, negative or violent shows on TV or at the movies, and even the way that you speak to yourself.  Ask yourself a positive question: Instead of I can't do this, say to yourself, "How can I accomplish this?" Your children will mimic you and everyone will have a better life because of it.

This week's recipe is a healthier version of one of my favorite sandwiches when I was growing up, before I kept kosher. I have turned it into a parve wholegrain a very close copycat of the classic BLT sandwich. I call it the "California TLT" because of the whole grains and the addition of the California style avocado.

Karen is a stay- at- home mother of five and an entrepreneur who has had a passion for cooking since childhood.? For Karen cooking is like a sixth sense, much like those with an ear for music can pick up and play an instrument without knowing the notes? Karen and her family decided to live an observant modern orthodox Jewish lifestyle 15 years ago. She now transforms her favorite American and international non-kosher dishes into delicious kosher fare.

After college she served in the Israel Defense Forces, married, and now devotes her life to her family, friends, faith, and love of cooking while running a thriving health and wellness business from home. Karen has taught kosher cooking classes for the past 10 years in Boca Raton with her friends, Lauren Bakst, a gourmet cook, and Lowil Stoller, a pastry chef.

Karen's recipes were featured at a dinner honoring the best chefs of the capital district hosted by the Marriot Hotel in Albany, New York. She has catered affairs up to 350 people including the Maimonides Medical Society annual dinner for over 100 Physicians at the Albany Medical Center Hospital.

This week I made a lot of latkes!  It is critical that you make them in a pan where they won't stick and brown evenly. As most non-stick pans contain PFOAs that are known carcinogens, I stay far away from them!
 
I have found a professional brand that can stand up to my heavy usage.  The brand is Scanpan, a large frying pan which I use for my latkes as you can see in my recipe on the Delicious and Kosher website.  I own a few of them for both meat and dairy as they are equally good for omelets and schnitzel, as well as for delicate items, such as salmon or chicken burgers.

California TLT Sandwich*

I did not grow up in a kosher observant home. There are certain foods that I decided to give up when I decided to keep kosher. I used to love bacon, lettuce and tomato sandwiches. Several  years  after I became kosher, I also became vegan for about 2 years. That is how I discovered meat alternatives, like seitan (made from wheat gluten), tempeh (made from fermented soy beans) and of course tofu.  I took vegan cooking classes and immersed myself in learning all that I could about this whole world of vegan cuisine that had just opened up to me.

I created this tempeh lettuce and tomato sandwich with one of my favorite creamy additions, avocado. You can use real mayonnaise if you prefer; however, this is delicious with the no cholesterol Vegenaise as well. Kids and adults alike love this sandwich, even if they are not vegetarian or kosher!


1 package Fakin' Bacon (organic, smoky tempeh strips) by Light Life brand (found in the refrigerator section of your local Whole Foods type store.)

2 tomatoes, sliced into rounds

romaine lettuce leaves, as needed

1 avocado, peeled, pitted and sliced, then lightly sprinkled with sea salt

Vegenaise or mayonnaise, as needed

olive oil, as needed for browning Fakin' Bacon slices

whole grain bread such as Ezekiel brand sesame live-grain sprouted bread

In a large frying pan over a medium heat, brown the Fakin' Bacon slices until golden on both sides, turning carefully with a fork or tongs.

On each toasted slice of bread, coat with mayonnaise or Vegenaise, then layer first  with lettuce leaves, then with tomato and avocado slices, then with the crisped and browned Fakin' Bacon slices. Each sandwich should have about 3-4 Fakin' Bacon slices.
