I am so excited to share this inaugural issue of Delicious and Kosher Weekly with friends, family and everyone who does not know me yet, but is looking for some help in the kitchen and new ideas for balancing your life with great food and renewed health.

Help is on the way! I have finally realized a dream of how I can share my passion and knowledge with the most amount of people and truly help to improve the quality of their lives. DeliciousandKosher.com is a beautiful marriage of my two passions: cooking and creating recipes, and natural health and nutrition. I feel so blessed to have been given a talent for cooking, as well as passion for health, that I feel compelled to share my expertise with others.

I used to think that writing a book was my only answer, as I am a very busy mother of five. Being with my family is a priority, so the idea of opening a restaurant or running a catering business was not an option. Since I love the idea of being able to leverage my time, that is why I also run a health and wellness network marketing business from home. This enables me to choose when I work and help thousands of people in the process, even with my limited hours.

After reading an excellent book by Gary Vaynerchuk last January entitled Crush It - I encourage you to read it too! - I realized that I had to stop waiting until a book was published for me to share my recipes with the masses. I realized that the Internet is a way to reach out to so many people who need my help NOW! Fast-forward 7 months later, and here we are...

Why Virgin Coconut Oil Needs to be in Your Diet

For some time people have confused unhealthy palm oil, which is hazardous to your health, for coconut oil. This couldn't be further from the truth! There are numerous health benefits to adding coconut oil to your diet. The medium-chain fatty acids in coconut oil are the healthy ones that are readily converted into energy by the body, so this is a much-needed healthy fat. Although coconut oil has been charged with increasing cholesterol, this is far from true. Coconut oil contains no cholesterol, and better yet, has the ability to reduce serum cholesterol. Traditional medicine among the Asian and Pacific population have used the healing properties of coconut oil extensively and to great effect. Pacific islanders consider coconut oil to be the cure for all illness. Scientists have recently discovered the healing properties of coconut oil and how it can be used in modern medicine to treat a variety of conditions. Because it is a natural product it doesn't contain the man made additives that are often found in similar products.

Here's why coconut oil is so highly regarded:

Buy the cold pressed-virgin variety.
Look for coconut oil that has been farmed and processed with your health in mind.
Look for fair trade products, not tainted with pesticides.
You will need to keep it in a cool dark place to protect its healthful qualities.


Question: "Whenever I buy natural peanut butter it always separates and is so hard to mix. Is there a way of preventing this?"

Answer: The health benefits in natural nut butters far outweigh the convenience and ease of use of nut butters that are loaded with dangerous trans fats / partially hydrogenated oils and sugar. Here is an easy tip that will help you with any natural nut butter such as peanut butter, almond butter, and even tahini. With nothing added to keep it emulsified, the oil in natural nut butters tends to separate and float to the top of the jar. Stirring the oil back in takes elbow grease, but gravity can do the work for you if you leave the jar upside down on the counter overnight. Once gravity mixes the oil back in, store the peanut butter in the refrigerator, both to keep it fresh and to solidify the oil so it can't separate as easily.
 
Question: What is the best way to store and ripen a mango?
 
Answer: Store mangoes at room temperature until they become just soft and ripe, and then transfer to the refrigerator where they will keep for up to a week. In order to ripen the mango more quickly, store the mango in a paper bag (as should be done with most fruit) at room temperature. You can also freeze peeled mangoes either in slices or as a puree in BPA free freezer bags / plastic containers.

Karen is a stay- at- home mother of five and an entrepreneur who has had a passion for cooking since childhood.? For Karen cooking is like a sixth sense, much like those with an ear for music can pick up and play an instrument without knowing the notes? The inspiration of her mother's and grandparents' creative and talented cooking helped form the foundation for her passion for cooking.

From the first falafel she tasted from an Israeli cook, to the lessons from gourmet Italian home cooks and restaurant chefs, to days spent learning from her friend's mom about Hong Kong cuisine, to trips to Chinatown and living in Israel, to mastering the art of Persian cooking after marrying her Iranian husband, to lessons from gourmet Moroccan friends in Boca Raton, Karen lives and learns from every culture and is excited to share that wisdom with you.

Karen and her family decided to live an observant modern orthodox Jewish lifestyle 15 years ago. She now transforms her favorite American and international non-kosher dishes into delicious kosher fare.

After college she served in the Israel Defense Forces, married, and now devotes her life to her family, friends, faith, and love of cooking while running a thriving health and wellness business from home. Karen has taught kosher cooking classes for the past 10 years in Boca Raton with her friends, Lauren Bakst, a gourmet cook, and Lowil Stoller, a pastry chef.

Karen's recipes were featured at a dinner honoring the best chefs of the capital district hosted by the Marriot Hotel in Albany, New York. She has catered affairs up to 350 people including the Maimonides Medical Society annual dinner for over 100 Physicians at the Albany Medical Center Hospital.

My grandfather first introduced me to the half sheet pan, otherwise known as a jelly roll pan, when I was a child. He loved to cook (it really is in my blood!), and he sometimes took me with him to the restaurant supply store to pick up some supplies. I was so impressed! He stocked our home with half sheet (jelly roll) pans, and my mom used them constantly from then on. My favorite food that he cooked on the sheet pans was his oven fried chicken....I still can smell and taste it...
 
When I was first married I used the half sheet pan often, from baking Challah and cookies, to broiling chicken and kebabs, to roasting veggies. It took a few years and many soaked and scrubbed pans for me to discover parchment paper and silpat liners. I now mainly use all natural unbleached parchment paper, and I will never go back to scrubbing and soaking those pans again! I prefer unbleached parchment because it does not contain bleach as does regular parchment. This is another way of protecting my family, helping to keep us healthy.
 
These pans are one of those items that you must have several of, and in a kosher kitchen you will need a couple for both meat and dairy meals. As with most of your pots and pans etc in a kosher kitchen, it is best to clearly label and identify them as meat, parve or dairy by using either color coded heat proof labels or kosher coin tags available at: www.thekoshercook.com

Whole Foods Power Bar
This is a great Eat Clean inspired recipe for a healthy and quick snack that packs a punch! Kids love it, and it is a great way to sneak nutrition into a small , convenient and inconspicuous package! Adults love it as a healthy alternative to pre-workout snacks and as a decadent, yet nutrient dense, treat when any cravings set in. The preparation for this involves minimal prep and almost no cooking!

2 tablspoons virgin coconut oil/butter
zest of one orange, grated
2 teaspoons pure vanilla extract
1 ? cups natural peanut almond butter or a combination of both (no sugar or partially hydrogenated fats added, only pure nuts and salt, or just nuts)
? cup agave syrup or pure maple syrup or honey
2-3 scoops Isagenix IsaLean vanilla shake
? cup sliced or slivered almonds, raw or toasted
? cup organic raisins
1/3 cup organic dried fruit, such as cherries, cranberries, etc.
3 tablespoons ground organic flax seeds
2 ? cups organic rolled oats
? cup sunflower seeds
pinch sea salt, if needed

Line a square pan with parchment paper. (I use the natural unbleached variety.) Combine first five ingredients in a saucepan over low heat, mixing until fully incorporated and smooth. Remove from heat.
Add the remaining ingredients and mix well. Spread the mixture evenly into the lined square pan , cover and keep in fridge until ready to eat. Eat once fully cooled and set. Cut into squares as needed. Freeze cut-up pieces in a ziplock back and defrost as needed.
Serve 12-16
* Dairy with Isagenix shake powder; Parve with non- dairy/Parve shake powder
